100% grass fed & local Ontario raised without the use of antibiotics or any added hormones
Cut from the tenderloin and trimmed of fat
Very lean cut, full off flavour and wonderfully tender
Very rich cut of meat, same cut where Fillet Mignon Steaks come from
Suggested cooking: seasoning rub, pan sear to keep juices in and then roast until internal temperature reaches 120F (for rare)
